Traditional Balsamic Vinegar of Modena represents a unique product worldwide within the landscape of vinegar-based condiments. The must of typical grape varieties, cultivated for centuries in the area of origin and cooked in open vessels over direct heat, is transferred into barrels made of fine woods, where it undergoes acetification through extremely complex natural fermentative and oxidative processes.
In the quiet atmosphere of the vinegar cellars, thanks to the specific technique of decanting and many years of aging and maturation, the wide range of microbial and enzymatic transformations reaches a remarkable balance of aroma and flavor.
